My Bishop character is Lv.174, and I keep running low on mesos every time I buy expensive items that recovers a lot of your MP. I heard about Bossing, but I don’t know where to do that at.

If you are using the default keybinds, you can press F4 to open the boss menu, from here you have a list of bosses that you can attempt.
To start with, you'll want to start doing Zakum, eventually moving onto new bosses as you gain the power to clear them.
You will want to start with normal Zakum if you are around level 100 or higher.
If you open up guide (press F1 twice by default) then switch to the "Boss Content" tab, you can see the list of bosses from hardest to easiest.
Scroll down to the bottom to find Zakum, as you gain in power you'll want to move up the list when you feel like the bosses you are currently fighting are too easy.

Bosses up until you reach Easy Cygnus, Hard Hilla, Chaos Pink bean are daily bosses. Once you hit this point on the list (represented by a bronzish looking star) these bosses are weekly bosses. (Resets on Thursday morning 00:00 UTC)
You can click the icons for each boss to see what rewards you can get for clearing them. If you open up your "Quick Move" menu in town you can sell the power crystals you get from killing bosses to "The Collector", the guy with white hair holding a crystal and wearing a monocle.

In the collector's UI you can click "Check Price" to see how much meso each boss is worth when selling their crystal.
Weekly bosses can only be cleared on one difficulty per week, and the highest 14 valued crystals are counted towards a per character limit.
Each account can clear up to 180 bosses per week per world. At the start of your journey you're going to want to clear as many daily bosses as you can to get as close to the cap as you can afford the time for.
As you get stronger you'll slowly replace these daily runs with weekly bosses.

Good luck on your journey and happy mapling!

I’m not sure if I using default keybinds, or not. How do you go to the boss menu without using default keybinds?

I’m not sure if I using default keybinds, or not. How do you go to the boss menu without using default keybinds?

You can check your hotkeys for "Boss Party" (A yellow/orange icon) which you can also access via clicking on the community button (blue icon with three people, visible when your quickslots aren't expanded) and selecting "Boss"
For the hotkey "Guide" (also yellow/orange) you can also access this menu via click the character button (blue icon with one person, next to the community button) and selecting "Maple Guide", a third option is to setup what bosses you wish to do in the "Maple Planner" (Blue hotkey named "Planner") which is also found on the icon menu on the left side of your screen as a blue book.

Inside of the Maple Planner, on the right side is "Boss content", you can click the gear to bring up a list of all bosses in the game.
Check the bosses that you wish to be have added to your list and press save once done, these bosses will appear on the right side of the planner when you open it up.
You can click the arrow next to the boss name to be teleported directly to the lobby of the boss. Most bosses have their portal to actually fight them on the farthest right side of the map, it will open up a UI asking what difficulty you want to fight if you entered the correct portal.
